Raw Cacao Love. {recipe}
25.09.2011
My darling girlfriend and fellow comfort-food-loving Taurean Candice, gave me this Raw Cacao Brownie recipe. I pottered around the kitchen this lovely Sunday afternoon making a batch and holy moly – they are so, (SO!!!) damn good I had to share it. (Gluten Free, sugar free*, dairy free, guilt free… woo!)
Here’s the down low:
2 cups walnuts
2 cups walnuts
1 cup raw cacao powder
2 and a half cups fresh dates
1 cup lightly chopped almonds
1 heaped tablespoon of cold pressed coconut oil (optional**)
1/4 teaspoon salt
Blend walnuts in a food processor until floury. Then add in the salt and cocao powder. Add in the dates and coconut oil and blitz in food processor until combined. Empty into a bowl and stir through almonds. Press into a 25cm square backing tin. Refrigerate for an hour then cut into squares. Keep in the fridge. Indulge!!
* I say guilt free, which is relative to the fact I usually down an entire block of chocolate on my own, so the natural sugar in the dates doesn’t worry me.
** Original recipe didn’t have the coconut oil but my darling friend Sarah (Sarah Wilson) keeps telling me I have to eat as many good fats (coconut oil, avocados etc) as possible so I added it in.
